Food stations and spatial distribution

Traditional buffet structures are progressively being replaced by distributed catering systems, where snack points and live preparation areas are integrated into the spatial logic of the event rather than treated as isolated service points placed at the margins.

This configuration creates a different kind of movement, less linear and more organic, with guests circulating between micro zones that encourage spontaneous interaction, brief encounters and extended conversations that arise without formal scheduling.

Current directions in catering innovation

Sustainability has become a defining requirement rather than an optional feature, influencing sourcing decisions, waste management strategies and seasonal planning, while personalisation continues to grow through menus adapted to dietary needs, cultural diversity and increasingly specific guest expectations.

Hybrid service models are also emerging, combining seated dining with roaming service formats, creating flexible environments where structure and fluidity coexist without fixed boundaries and where the experience is shaped by movement as much as by consumption.
